Best way to point to pages still living on the old site?
I'm moving the bulk of our old website to the new one as phase 1 of our migration. However, we had some sections with a lot of custom controls/modules I'm going to have to rewrite. Until I get that done I'd like to have a 302 redirect back to the old pages.
I'm planning to change my domain name to point to the new site (mysite.com) and make a sub-domain name point to the old site (pages.mysite.com).
I think if I declare them as external pages in the new site, Sitefinity will do a 301 redirect to the address. Am I better off using IIS to set up the redirects to these pages?

Our recommendation is to fully prepare the new project, fix the URLs to make sure that you don't reduce your SEO score and then switch to the new project. This will provide the best experience for the site's visitors. For example, if the user navigates to one of the pages which redirect, he will end up in the old site. Any and all navigation links from there will probably keep him "stuck" in the old site which might not prove to be the best experience.
You could consider one of these options:
1. Create the new site on the new domain or sub domain while keeping the old one as-is until the new site is 100% ready.
2. The preferred way to do the redirects in this case would be with a custom HTTP module or using IIS to set up the redirects.

I'll try to keep the pages on the old site to a minimum and make sure all the links on them point to the new site.
