We noticed today that editing the properties of a blog also updates every single blog post's "last modified" date. Pretty sure that is not intended behavior is it?

To reproduce: fire up a new/blank instance of SF. Create a new blog, create several posts, note their last modified date/time. Now edit the blog (container) and save. Go back in to list the posts, note the date/time listed is the same for ALL entries.

This is indeed a bug in the Blogs module. I have logged the bug in our system. You could review the bug description in our Feedback portal on the following URL. Follow the item in order to receive notifications when the status of the bug is changed.
