Administrative Form Response Fields

Is there any way to access/manipulate form response fields such as submitted on, status, and owner without writing custom code?  My team is looking to do a project which involves accessing/changing these fields and we are wondering if there are any workflows/settings that can reduce the amount of custom code we will have to write.
