I want to allow authors to control the order blog entries are displayed. By default Sitefinity sorts by LastModified which is great when adding new entries, but as soon as you edit one it gets out of place. And your really screwed if you edit the blog properties (like assigning a default page) cause all the posts are modified with the same date and time.

I want to add a custom field for publish date and change the sort of the "Blog Posts" control. Where do I set the sort option, and can I simply use the new custom field name, or is something more needed?

If I am understanding you correctly the desired functionality is offered out of the box. I have recorded and a short video to demonstrate it.
