Project Name Change / Workaround Question

Is there a way to change the project name in Sitefinity 8.1? The project was originally only going to be for demo purposes but is now being used for production.

As a workaround, we created another application in IIS that points to the demo folder in wwroot, and gave it a name without "demo" in it, but even with output caching disabled, the changes made through demo/sitefinity are not propagating to the new site right away. Do you have any suggestions on how we can resolve this issue if we cannot rename the project outright?
