I'm trying to create a new theme (css) for Rollbase, and I'm wondering if it's possible to set my theme into the dropdown list "application theme - Preview" on Rollbase topbar.

No you can't add it. We have been talking about adding a theme builder for a bit now. Stay tuned in eap.rollbase.com.

Currently Rollbase do not support adding additional custom theme to the dropdown list. However if you are on private cloud and wish to override the default rollbase theme you can customize in newui.css which is under following locations:
For master:
$Rollbase_Base\Pas_Instance\webapps\master\css\newui
For Prods:
$Rollbase_Base\Pas_Instance\webapps\prod1\css\newui
