When creating a chart, the fields available for X Axis seem to be limited. For example, I have a billing object, and I want to chart the number of loans settled by each processor, or the number of loans settled for each office, but neither processor or office appear in my drop-down list of fields.

The reason you aren't seeing these fields when selecting the axes for your chart is because your Processor and Office fields are text fields. The charting engine does not graph text fields because they contain arbitrary values. You can only graph picklists, statuses, checkboxes, dates, etc (fields that can contain a fixed set of values to plot)
If your Processor or Office fields were changed to Picklist, or Lookup field (i.e. a relationship), you would be able to chart them.
