I am reviewing an example portal in the system - when you add work history/education/skills/languages/dependents they do not show up in the Related Record view. I did not build this portal but I am using it as a skeleton for one I am doing, what setting can i tweak so when a related record is added it actually shows up in that view?

The reason this wasn't working is because the Employee lookup field in all of the Add/Edit pages in the portal was not set to automatically use the record in scope. I corrected this in all of your Employee Portal pages. You will need to do a similar thing in your loan portal to get that working.
From now on, any portal user will be able to see related records created in the portal because they will actually be related.
